Spinach pancakes are a healthy take on an otherwise indulgent breakfast. If they were not green, I promise you would not know that spinach was used! This green breakfast tastes like your classic pancake breakfast with the added benefits of vitamins, folic acid and iron thanks to the spinach! So, if you love pancakes and want a healthy breakfast, give these a try!



  • Spinach: The spinach gives the pancakes the green hue. It is blended until smooth and then mixed with dry ingredients.
  • Milk: This recipe has been tested with whole milk and almond milk. Both milks produce similar pancakes.
  • Greek Yogurt: This recipe has been tested with non-fat and whole milk greek yogurt. Both recipes resulted in moist pancakes!
  • Vanilla Extract: The vanilla gives the pancakes some extra sweetness and, in my opinion, is a must!
  • Eggs
  • Melted Butter: The melted butter contributes to the classic pancake taste.
  • Flour
  • Baking Powder
  • Salt



  • Start by adding the spinach, Greek yogurt and milk to a blender. Blend ingredients together on medium for about 2 minutes.
  • Whisk together flour, baking powder and salt in a large mixing bowl.
  • Add melted butter, whisked eggs, vanilla and spinach mixture to the dry ingredients.
  • Stir together until ingredients are combined. Batter will appear slightly lumpy.
  • Turn a griddle onto medium heat.
  • Cook pancakes on the griddle. Flip pancakes when edges are formed and bubbles on top of pancakes are beginning to burst.

Expert Tips

  • Be sure to fully combine the spinach with the Greek yogurt and milk. You do not want to see any green leaves in the mixture.
  • Try using a 1/3 – 1/2 cup measuring cup when pouring your pancake batter on the griddle. This will help all pancakes to be the same size.
  • Add chocolate chips or blueberries when cooking the pancakes on the griddle for a fun surprise!

Healthy Spinach Pancakes with Greek Yogurt

  • 2 cup Spinach
  • 1 cup Milk
  • 1/4 cup Greek Yogurt
  • 2 tsp Vanilla
  • 2 Eggs- Whisked
  • 3 tbsp Butter- Melted
  • 1 1/2 cup Flour
  • 3 tsp Baking Powder
  • 1/2 tsp Salt


  • Add spinach, Greek yogurt and milk to a blender. Mix on medium until spinach is blended and mixture is smooth.
  • Sift flour, baking powder and salt together in a mixing bowl.
  • Add spinach mix, melted butter and eggs to dry ingredients. Stir until combined.
  • Set a griddle or skillet to medium heat.
  • Cook pancakes on griddle. Flip once outside edges are firm and bubbles on top of pancakes begin to pop. Remove from griddle once bottom side is cooked and golden.
  • Serve with maple syrup and whipped cream.
