Melon Caprese Skewers with Crispy Prosciutto

These Melon Caprese Skewers with Crispy Prosciutto are a quick appetizer made with fresh fruit and basil. These mini kabob appetizers look fancy but are quite simple to make!

  • 1/2 Seedless Watermelon about 2 cups
  • 1/2 Cantaloupe Deseeded; about 2 cups
  • 1 Cup Fresh Basil Leaves
  • 1/2 Cup Balsamic Glaze
  • 1 8 oz Mozzarella Ball or Log
  • 4 oz Prosciutto Each piece sliced into thirds
  • Skewers


  • Turn a medium saute pan to medium heat. Place prosciuttuo in pan and cook for about 60-90 seconds on each side until beginning to crisp.
  • Remove prosciutto from pan and let cool on a paper towel lined plate. Repeat with remaining prosciutto slices.
  • Chop or cube cantaloupe and watermelon into bite sized pieces.
  • Slice mozzarella into bite size pieces.
  • Fold a basil leaf in half and slide onto skewer. Follow with a piece of melon, mozzarella, prosciutto, melon and folded basil leaf.
  • Repeat for all skewers.
  • Drizzle with balsamic glaze.
  • Serve with an additional size of balsamic glaze.
