Bacon Broccoli Quiche is a protein packed breakfast or lunch. Toddler and adult approved, it is the perfect make ahead meal!
Happy last day of November! I can't believe that tomorrow is December 1 and the holiday season will be well under way! When I think of the holidays, I think of houses full of family and friends. Family and friends that you need to feed.....
I come from a family where 'it is all about the food.' Our holidays are full of rich dishes, sweets and tons of dishes. Now that I have two little ones, it is important for me to have meals that I can prep ahead of time and bake in the morning. Quiche has become a go to meal in my house. Not only can you make it ahead of time, my toddler and 6 month old will eat it! This is a big WIN-WIN!
What's in the quiche?!
Well, the name says it all. Bacon Broccoli Quiche has:
- Lightly steamed broccoli
- Cooked bacon
- Shredded cheddar cheese
- Eggs
- Half & Half
- Salt
- Pepper
- Pie Crust
What can I prep ahead of time?
Well, you can prep the entire quiche ahead of time! If you want to save time the day that you are making it, you can prep the broccoli and bacon beforehand. I like to use my Pampered Chef Micro Cooker to steam the broccoli. I suggest under-steaming the broccoli. You want it still have a little crunch as the broccoli will continue to cook ahead of time.
I bake my bacon in the oven. To do this, put tin foil on a cookie sheet. Place a cooling rack on top of the cookie sheet. Line bacon slices on the cooling sheet. Make sure that the bacon is not overlapping (you will not be able to fit an entire pound of bacon on one sheet). Bake at 350 degrees for 35-40 minutes until crispy. Save 3 slices of this bacon for the quiche. Save more bacon if you want a heavier quiche.
To prep, whisk eggs and half & half in a large bowl. Stir in the chopped broccoli, chopped bacon, cheddar cheese, salt and pepper. Pour the egg mixture into a pie crust. Refrigerate until ready to bake. Remove the quiche from the refrigerator while the oven preheats and allow it to come to room temperature. Bake the quiche according to instructions.
Broccoli Bacon Quiche Substitutions
This recipe is the base that I use for all of my quiche dishes. I will be sharing more flavor combinations soon! For this particular quiche, you can omit the bacon and add extra broccoli. You could add extra bacon, remove the broccoli and add extra cheese. Or, you could use whatever vegetables and cheese you have on hand! Think about what your guests (or picky toddlers) will enjoy eating!
Want to serve this as lunch?
To serve for lunch, I suggest adding a salad. Quiche plated with a salad presents beautifully and can be prepped ahead of time! This quiche would be great with Butternut Squash Arugula Salad or Brussel Sprout Salad.

Bacon Broccoli Quiche
Ingredients
- 1 Unbaked Pie Shell (store bought or homemade)
- 6 Large Eggs
- 1 cup Half & Half
- 3 Bacon Slices- Cooked and Chopped
- 1 cup Broccoli- Lightly Steamed and Chopped
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
- 1 cup Shredded Cheddar Cheese
Instructions
- Preheat oven to 350. Spray a pie pan with baking spray. Place pie shell into pan.
- To a large bowl, whisk together the eggs and milk until the eggs are combined.
- Stir in broccoli, bacon, cheddar cheese, salt and pepper.
- Pour egg mixture into pie shell.
- Bake for 40 minutes until the center of the quiche is set.
- Let cool for 10 minutes before slicing. Serve warm or at room temperature.
