Crockpot Venison Chili is a deer chili full of vegetables and beans. This hearty chili is simple, healthy and hearty!

Chili is one of my go to dishes to make for a cold day. Chili is welcoming and comforting. It is perfect for large crowds because it is so simple to make.

We always have plenty of venison (deer meat) in our house. I like to have the venison ground like burger meat. I find that ground venison gets the most use. This Crockpot Venison Chili uses ground venison, hearty beans and lots of vegetables to get extra flavors and all of the health benefits. I promise, you won't even know you are eating venison.

Venison Chili tastes like all of the seasoning and flavors it is cooked with. If you are worried that venison chili will taste gamey, do not worry! While wild game can have a gamier taste than most meat, this venison chili tastes has a sweet and spicy taste.

 

Details

Level of Difficulty: Easy! This crockpot meal comes together quickly. You start by browning the meat with the vegetables and then everything is dumped in the crockpot to slowly cook. Your house will smell amazing while these flavors cook together!

Flavor: Sweet and Spicy! This Venison Chili is sweetened with brown sugar to balance out the spices from the fire roasted diced tomatoes, jalapenos and chili powder.

Time: This recipe require about 10 minutes of active cooking time. After that, all ingredients will cook together in the slow cooker for a minimum of 4 hours.

Venison chili ingredients: black beans, chili beans, venison, tomato sauce, tomato paste, diced tomatoes, mushrooms, onion, garlic, peppers and spices.

Ingredients for Venison Chili

While this ingredient list may seem long, most ingredients are pantry staples. If you do not have all of the spices, feel free to substitute more or less of the spices.

  • Ground Venison: Substitute lean ground beef or ground chicken.
  • Onion: Use either a white onion or a sweet onion.
  • Pepper: Any colored pepper will work!
  • Garlic
  • Mushrooms: I use sliced white mushrooms and finely chop them. The mushrooms take on the taste of the chili and are not detectable (even by toddlers).
  • Jalapeno (not photographed): Remove the seeds. If looking for less spice, omit the jalapeno completely.
  • Tomato Sauce
  • Tomato Paste
  • Diced Tomatoes: I like to use the fire roasted tomatoes for more flavor.
  • Baked Beans: Bush's Vegetarian Baked Beans are my favorite to use because they add more sweetness.
  • Black Beans: These are used for extra protein. If your family doesn't like beans, feel free to omit. You can substitute in extra vegetables.
  • Extra Virgin Olive Oil
  • Chili Powder
  • Paprika
  • Cumin
  • Salt
  • Garlic Powder
  • Onion Powder
  • Cayenne Pepper
  • Brown Sugar

 

 

Let’s Get Cookin!

  1. Chop Ingredients. Start by chopping the onion, pepper, jalapeno (if using), mushrooms and garlic.
  2. Sauté ingredients. Heat a medium size sauté pan over medium high heat. Add Extra Virgin Olive. Once EVOO is hot, add ground venison, onion, pepper, jalapeno, mushrooms and garlic. Brown meat and sauté vegetables. Mix ingredients together.
  3. Add to crockpot. Place ground venison and vegetables in the pot of a large slow cooker. Add in remaining ingredients and stir.
  4. Cook! Cook in the crockpot for 4-6 hours on high or 6-8 hours on low.
  5. Enjoy! Before eating, give the venison chili a good stir. Serve topped with sour cream and shredded cheese.

What to serve with Venison Chili?

I serve my chili with shredded cheddar cheese, sliced jalapenos and sour cream on top. I recommend having some cornbread to go with the chill. Another fun option is crushed tortilla chips on top!

 

Can I make Venison Chili without a crock pot?

Yes, you can make Venison Chili without a crockpot! Simply use a large soup pot. Begin by browning the ground venison and vegetables in this pot. Add all remaining ingredients and stir together. Cook on low allowing the chili to simmer for at least 30 minutes. Stir often and taste prior to serving.

 

Is Venison Chili good for you?

Yes, Venison Chili is good for you! Venison is a very lean meat with minimal fat. This Venison Chili is full of good for you vegetables. The beans give the chili extra fiber and protein making this a healthy and hearty meal.

 

Can you freeze Venison Chili?

Yes, you can freeze Venison Chili. I recommend freezing in a large freezer bag. You can freeze the ingredients before cooking or freeze the leftovers. Make sure that you lie the freezer bag flat in your freezer. Dethaw in the refrigerator overnight. Reheat the chili in the crockpot or on the stovetop.

Expert Tips

  • Use a food processor. Using a food processor allows you to quickly chop all of your vegetables saving precious time. Here is the food processor I have!
  • Use different vegetables. Sneak in extra peppers or use some carrots in the chili! The vegetables take on the taste of the chili and are easy to hide.

Ingredients
1 tbsp Extra Virgin Olive Oil
1 Sweet Onion- chopped
1 Pepper- chopped
1 Jalapeno - seeds removed and chopped
1 lb Ground Venison
3 Garlic Cloves- minced
8 oz Mushrooms- chopped
14 oz Diced Tomatoes
28 oz Vegetarian Baked Beans- do not drain
15 oz Black Beans- Drained and Rinsed
16 oz Tomato Sauce
8 oz Tomato Paste
3 tbsp Chili Powder
1.5 tsp Paprika
1 tsp Cumin
1/2 tsp Salt
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/8 tsp Cayenne Pepper
2 tbsp Brown Sugar

Instructions
Step 1.
In a large sauté pan or soup pot at medium, sauté onion, pepper, jalapeno, mushrooms and venison until vegetables are soft and meat is brown.
Step 2.
Add the garlic and stir for about 30 seconds until fragrant.
Step 3.
If using a crock pot, transfer mixture to crock pot.
Step 4.
Add tomato sauce, diced tomatoes, tomato paste, black beans and vegetarian baked beans. Stir to mix together.
Step 5.
Add the spices: chili powder, cumin, paprika, onion powder, garlic powder, salt, cayenne pepper and brown sugar. Stir to mix together.
Step 6.
Cook on low 6-8 hours or high 4-6 hours.
Step 7.
Serve with cornbread, shredded cheese, sour cream or tortilla chips!
