This Curry Shrimp Quinoa Bowl with Zesty Peanut Sauce is a healthy, quick lunch or dinner. Delicious and full of vegetables, this is a perfect dish to meal prep and eat all week!

Quinoa Bowl  Ingredients

Step 1: Cook the quinoa with the vegetable broth.

Step 2: Marinate shrimp with curry, ginger, garlic, and crushed red peppers.

Step 3: Cook shrimp until pink about 2 minutes per side.

Step 4: Add the remaining EVOO, bell peppers and red onions to the same pan. Cook until soft about 5 minutes.

Step 5: Make the zesty peanut sauce by adding all ingredients to a food processor and pulsing until smooth.

Step 6: Serve bowls by layering quinoa, peppers and onions, greens and shrimp. Top with Zesty Peanut Sauce and extra lime juice.
