The BEST rumchata cupcakes (using cake mix)

Hi! I am Lynne and I have never met a cupcake I didn't like. These cupcakes combine a sweet bakery cupcake flavor with RumChata! This gives the cupcake a sweet flavor with subtle spices. 

Gather your ingredients: White Cake Mix RumChata Butter (melted) Eggs

Preheat oven  to 350 degrees. Add cupcake liners to cupcake tin. Spray with cooking spray. 

Add all ingredients to a stand mixer. Mix for 2 minutes or until combined.  Do not overmix. 

Fill cupcake liners up 2/3 full. Bake for 16-20 minutes.  Meanwhile, make the RumChata icing.

Gather ingredients for RumChata icing:  Powdered Sugar Unsalted Butter RumChata Vanilla Extract Salt

Start by whipping the butter for 2 minutes.  Add RumChata, 2 cups powdered sugar, vanilla and salt. Mix again.  Once combined, add remaining 2 cups powdered sugar.

Allow cupcakes to cool before frosting them.  I recommend using a piping bag for the most beautiful cupcakes!
