Melon Caprese Skewers with Crispy Prosciutto
These Melon Caprese Skewers with Crispy Prosciutto are a quick appetizer made with fresh fruit and basil. These mini kabob appetizers look fancy but are quite simple to make!

- ½ Seedless Watermelon about 2 cups
- ½ Cantaloupe Deseeded; about 2 cups
- 1 Cup Fresh Basil Leaves
- ½ Cup Balsamic Glaze
- 1 8 oz Mozzarella Ball or Log
- 4 oz Prosciutto Each piece sliced into thirds
- Skewers
Turn a medium saute pan to medium heat. Place prosciuttuo in pan and cook for about 60-90 seconds on each side until beginning to crisp.
Remove prosciutto from pan and let cool on a paper towel lined plate. Repeat with remaining prosciutto slices.
Chop or cube cantaloupe and watermelon into bite sized pieces.
Slice mozzarella into bite size pieces.
Fold a basil leaf in half and slide onto skewer. Follow with a piece of melon, mozzarella, prosciutto, melon and folded basil leaf.
Repeat for all skewers.
Drizzle with balsamic glaze.
Serve with an additional size of balsamic glaze.
