Happy Fall Y'all! Who is ready for a cool fall cocktail for a crisp nights? My hand is in the air as I type this. Chai Simple Syrup is mixed with apple cider and whiskey for a refreshing cocktail that will warm you from the inside out.
Tell me about Chai Simple Syrup...
The hardest part of this cocktail is making this simple syrup. You could absolutely use regular simple syrup in this recipe, however, the Chai Simple Syrup really gives this cocktail all the fall feels. Chai tea bags are seeped in the simple syrup to give flavors of cinnamon, cardamom, cloves and ginger.
For the chai simple syrup, you need: water, dark brown sugar, chai tea bags, vanilla, and a cinnamon stick.
To make the Chai Simple Syrup, add 1 cup water and ¾ cup dark brown sugar to a small pot. Bring to a boil. Once boiling, turn the heat down to simmer for 2-3 minutes until the liquid thickens.
Remove from heat. Add 3 chai tea bags, 1 teaspoon vanilla and a cinnamon stick. Allow tea bags and cinnamon stick to seep for 10 minutes. Discard tea bags and cinnamon stick. Store covered in the refrigerator.
What else can I make with Chai Simple Syrup?
For non-alcoholic options, I have found that this simple syrup is delicious in coffee! When I use the simple syrup, I use half and half with my coffee and do not add sugar. The syrup has enough sugar in it. It also is great in hot tea. I have found that this syrup keeps well in the refrigerator for about a week.
To make a fun, fall mocktail, you could use this simple syrup with apple cider and top off with a little ginger beer!
Onto the Chai Cider Bourbon....
It is time to shake up your cocktail! To a cocktail shaker, add 3 oz apple cider, 2 oz whiskey and 0.75 ounces Chai Simple Syrup. Shake, shake, shake and pour over ice. Garnish drink with fresh apple slices and a cinnamon stick!
As far as whiskey recommendations go, I enjoy using High West Double Rye. This pairs well with the cinnamon flavors.

- 2 oz Whiskey
- 3 oz Apple Cider
- 0.75 oz Chai Simple Syrup
- Apple Slices, Cinnamon Sticks for garnish

- 1 cup Water
